Preparing Shkmeruli in the Mountains of Racha

What to Expect

Early in the morning we will leave Kutaisi, and by noon, after passing the Sacire Reservoir, the picturesque Nakerala Pass, and the homeland of Khvanchkara - the town of Ambrolauri, we will arrive at the village of Shqmeri in the mountainous region of Racha, located at an altitude of 2000m. From here, almost the entire Caucasus is visible, from Elbrus to the mountain peaks of Ossetia. Legend has it that the famous shkmeruli - chicken with garlic in melted butter - was first cooked right here. You will not only learn this story: I will also tell you about other dishes of our region, including little-known and completely forgotten ones.

Along the picturesque road, we will ascend to the high-mountain Shkmeri plateau. We will make a stop at the magnificent canyon where the river disappears underground, talk about life in mountain villages, and cook traditional Shkmeruli together. You will appreciate how incredibly delicious food is in the fresh air, amidst pristine nature: around - endless mountains, above - clear sky, and only the wind rustling in the grass and breaking the silence of the high mountains.
