At the ancient market of Malaga, I will help you select the freshest ingredients for future dishes, and then you will embark on a spectacular master class, where you will learn the most important nuances of preparing two iconic dishes of Spanish gastronomy and even learn to 'hear' the rice to create a true culinary masterpiece!
What to expect
Shopping for ingredients at an authentic market
First, we will head to the ancient market of Malaga, Atarazanas. Along the way, I will briefly tell you about the history of this place, and then we will start choosing the freshest ingredients for the master class. We will buy fragrant bread and vegetables – I will show you which tomatoes are suitable for delicious gazpacho – as well as meat or fish, depending on the type of paella you choose (vegan, meat, made with Iberian sausages or with seafood, including even black rice with squid ink). And after that, we will go to the workshop, which is just five minutes away from the market.
Meeting the maestro
In addition to the differences in paella from different regions of Spain, this dish has its own secrets for each chef. The master class will be conducted for you by a master chef, a master of the Andalusian guild of chefs, a teacher of the gastronomic craft, and a native of Malaga. The introduction will be accompanied by tasting of rustic bread and various types of local olive oil, toasted almonds, olives, and famous Spanish wine.

'Chopping the ingredients correctly is already 50 percent of success', says the maestro. You will learn to skillfully handle the components of future dishes. You will discover that sight and smell are not enough, and in order for everything to turn out, it turns out you also need to have a good ear to hear the rice, which sends signals about its readiness. And these are far from all the secrets that you will hear at the master class! While the paella is bubbling away, you will prepare gazpacho – a cold tomato soup, especially popular in Andalusia in the summer. You will learn how many types of such soups exist and how they differ in different provinces. And to conclude, you will taste the prepared dishes during lively conversations in a friendly atmosphere.
