Azerbaijani cuisine is a part of our culture: to better understand it, I propose that you cook traditional dishes yourself. At the market, you will feel the tastes and aromas of Azerbaijani cuisine. At the home of a professional Baku chef, you will learn about the country's culinary traditions, discover the right ingredients, cook two dishes, and enjoy a lively conversation.
What to Expect
🍷 National Gastronomic Traditions
Master class will not only be a pleasant learning experience of new skills and a tasty dinner, but also a delicious immersion into Azerbaijani culture through gastronomy. You will get acquainted with the daily life and traditions of a Baku family, learn how to pronounce real Azerbaijani toasts, and discover the rules of Azerbaijani-style table setting.
🍅 Atmosphere of the Baku Market
You will take a short trip to the market, where you will appreciate the assortment of vegetables, spices, and dried fruits. Fresh black caviar of the Caspian sturgeon, bright pomegranate juice, and much more will delight gourmets and awaken a healthy appetite and desire to quickly taste the dishes you prepare. Free tasting and bargaining until the last "patron" at the market are customary and pleasant to both buyers and sellers.
🥘 Master Class with an Experienced Chef
You will choose two favorite Azerbaijani dishes from the provided list in advance, so that we can prepare the necessary products, spices, and other ingredients. On the day of the master class, you will go to a cozy Baku apartment of a popular chef, who has been a culinary show hero. Under his guidance, you will learn about the ingredients of the selected dishes and start preparing the products, to then transition to cooking in a relaxed and fun atmosphere.
And after at the table, served in the best traditions of Azerbaijani hospitality, you will enjoy dinner - crispy tandyr-churek, fresh vegetables and herbs, and of course, your two dishes. Optionally, on the way from the market, you can buy wine at the best winery that complements the aroma of the chosen dishes.
Upon agreement with the organizer, you can choose any two dishes: one starter and one main course:
- Turshu-plov - with lamb and dried fruits
- Syabzi-plov - with herbs and meat
- Plov with free-range chicken, spices, and dried fruits
- Shah-plov
- Dolma from grape leaves
- Pip-dolma (with other types of leaves)
- Dolma from eggplants, tomatoes, and peppers
- Meat in a pot (veal, lamb, spices, dried fruits, chickpeas)
- National soups (dovga - sour milk soup with herbs, kyufta-bozbash - pea soup with meatballs, parcha-bozbash, piti - soups with lamb)
- Kutabs with meat, with herbs, with pumpkin, with cheese
Optional (at an additional cost):
- Sturgeon buglama (tomatoes, capi peppers, curry peppers, onions, potatoes, spices)
- Sturgeon buglama with herbs
Program 🕒
On the day of the master class, I will meet you at the hotel or any other convenient location for you, and we will go to the master class in a comfortable minivan. After preparing the dishes for thermal processing, we will go to the market while the chef will supervise the proper "behavior" of your dishes. After the market, we return for dinner.
