About this experience
I invite you to immerse yourself in a one-day gastronomic fairy tale of the 'Land of Fire'. To start off the morning, we will visit Yashil Bazar (Green Market) where I will talk about traditional Azerbaijani products and teach you how to choose them. And then we will head to my country house where we will cook several national dishes and enjoy a warm family dinner. It will be delicious and a little bit magical.
What to expect
Choosing products at the market
In the morning, I will pick you up from your place of stay, and we will head straight to Yashil Bazar or Green Market in Baku. Here, you will experience a 'performance' by actor-sellers and a marketing masterclass in one :) You can find any farm produce here, starting from juicy seasonal vegetables and fruits, to aromatic pickles and local goat cheese. Don't worry, I will tell you how to choose products and what dishes can be made from them. After purchasing ingredients for dinner and stimulating our appetites, we move on.
Ride back home
We will drive to my country house. On the way, we will see the sights and I will tell you about the city's history and what life is like there now. Optionally, we can stop by a boutique where you can taste the best local wines.
Cooking dinner
In the house, you will immerse yourself in the local atmosphere of celebration, warmth, and coziness. Together, we will cook the signature dishes of Azerbaijan. I will teach you how to prepare 3-4 traditional treats of your choice. What could they be?
- Shah pilaf in the form of a pie – rice in dough with lamb meat and dried fruits.
- Kutabs – flatbreads with a filling of meat, herbs, cheese, and pumpkin.
- Tikka-kebab, lula-kebab, or khan-kebab – kebab variations.
- Saj – stew of mushrooms, meat, sweet pepper, and various vegetables cooked in a special pan.
- Dolma wrapped in grape or beech leaves.
- Kufta-bozbash and piti – two completely different meat dishes with chickpeas.
- Azerbaijani basturma.
- The famous Baku khash – a very thick and hearty meat soup.
- Yarpaq hangel – lazy khinkali, and other dishes.
We will not forget to pay attention to homemade vodka (arag) made from different fruits – it's well known that in small quantities it is beneficial for the circulatory system and improves metabolism. Our drink is distilled several times, then filtered through honey, and at about 60 degrees strength, it retains smoothness and fruity aroma.
After such a wonderful and hearty day in a friendly atmosphere, I will drive you back to your place of stay.
