Uzbek cuisine is perhaps one of the richest in the East. To visit Samarkand and not try layered pilaf, juicy samsa, and proper tandyr gusht means to know nothing about Uzbekistan. People here love to eat deliciously, and they prefer to cook carefully and inspiringly. Do not hesitate (and skip breakfast): you will be served the most famous dishes in the places where they are prepared the best.
What to expect
Two hits of Uzbek cuisine
As many patterns as a person can see on an Uzbek carpet, that's how many types of pilaf can be found in Uzbek cuisine. We will offer you Samarkand-style pilaf. It is served not mixed, but layered: first rice, then zirvak (roast), and meat on top. The second popular dish of Uzbek cuisine with a lot of fans is samsa. Small pastries made of puff pastry can have a variety of fillings - from classic lamb to tender turkey and even pumpkin.
Proper tandyr gusht
Tandyr gusht ("meat in a tandyr") is the highlight of our program. We will head to a mountain pass for this. Tandyr gusht is prepared in a traditional clay oven with huge heat capacity, making the dish literally melt in your mouth. Usually, they take lamb meat and marinate it in fragrant spices: juniper, paprika, cumin, salt, black and red pepper. This dish is served to guests throughout Uzbekistan - and now you will also try a real tandyr gusht!
Wine, brandy, and Samarkand balsam
After a hearty tasting, we will visit the Samarkand winery for wine and brandy tasting. You will learn about the details of wine production and taste local wines: table, strong, and dessert varieties and ordinary (including vermouth, port wine, liqueur, kagor), as well as brandies and brandy drinks. The highlight will be the famous Samarkand balsam, which includes 40 components of herbs, grapes, and honey.
