About this experience
Our journey takes us to the Ayala Valley, known for its beautiful landscapes as the 'little Switzerland'. This region of the Basque Country is surrounded by the Sierra Salvada and Gorbea mountains, a true pastoral of green meadows with grazing sheep, vineyards, and Basque caserios (rural houses resembling farmsteads). Surrounded by these delightful landscapes, we will explore the production of the finest local wines, cheeses, and liquors with you.
What to Expect
- You will visit the oldest 'garage' winery (in Spanish - bodega) for the production of DO Txakoli de Alava wine. This place is where a new history of one of the oldest Basque drinks was revived. You will stroll through the vineyard, learn about the traditional technology of making this white and slightly sparkling wine, produced from a local grape variety that grows only in the Basque Country, and taste it paired with local snacks.
- Then we will go to a family cheese factory, located in picturesque countryside, near a sheep farm, where you will discover the secrets of making Idiazabal sheep cheese and farmer's honey (with tasting).
- Optionally, lunch at a restaurant-asador, located in an old Basque caserio, near a reservoir surrounded by mountains. Signature menu of Chakoli de Alava.
- After lunch, I invite you to visit the liquor museum, located in a family liquor factory that has been operating since the 19th century. There you can taste beautiful Basque liquors — pacharan, orujo, among others.
Organizational Details
Separate payment for the visit to the winery and cheese factory - 10 euros per person. And the visit to the museum - for the group - 50 euros.
